WHAT: Bakeapple BBQ Sauce Chicken Wings

DISH DECONSTRUCTION: Alongside the usual mid, medium, hot and honey garlic wings is an unusual bakeapple BBQ option. Eight wings (served with a side of ranch) come covered in a homemade bakeapple BBQ sauce created by executive chef Colin O’Neill to use an under-utilized local berry in a savoury dish. Sauce ingredients include the golden-orange berries also known as cloudberries plus tomato paste, vinegar, salt, sugars, mustard and spices. Bakeapples grow in Newfoundland’s bogs and fetch a high price since they’re hard to harvest.
WHY: I adore tart and tangy bakeapples and usually see bakeapple jams and sauces paired with vanilla ice cream or cheesecake. I liked choosing whether to have this sauce tossed with my wings or served on the side. I picked the “juicy baked” option that sends the wings through a conveyor oven for a brown exterior and moist but cooked interior. Others might prefer “crispy fried” wings for a crispy exterior and well-done centre. The popular sauce works its way into Brisket Nachos, BBQ Rib Mac & Cheese, the BBQ Chicken Bliss pizza and the Chicken & Ribs Combo. You can even go home with a small jar of sauce for $10.
BACK STORY: The Stone Ducky opened in April 2024 taking its name from the Stone Ducky Brook that flows beside the restaurant into the bay. A stone duck also refers to three stones stacked to show hikers the way along trails, which is fitting since the East Coast Trail winds through the area and there are plenty of trails to explore. The family-run restaurant is owned by Carlie Walker, her husband Piers Walker, and her retired parents Lynnette and Russ Lewis. I enjoyed lunch here after taking O’Brien’s Whale & Bird Tours out of Bay Bulls to the Witless Bay Ecological Reserve to see the puffin colony on a chilly day in May.
