The Forager’s Benedict at Kumama in Pine Bungalows celebrates mushrooms/Jennifer Bain
WHAT: Forager’s Benedict
WHERE: Kumama Bistro and Canteen, Pine Bungalows, 2 Cottonwood Creek Rd., Jasper, Alberta
PRICE: $22
DISH DECONSTRUCTION: This benny takes 64C eggs (that’s code for a sous vide-style cooking method that creates soft, tender whites and custard-like yolks) and pairs them with nicely seasoned wild mushrooms, pine nuts and brown butter hollandaise on a house brioche with a microgreen garnish and a side of dressed greens.
WHY: I’ve been out of the food loop for a hot minute and so love it when I need to google something on a menu (like 64-degree egg). Also these mushrooms were luscious and it was nice to have a change from English muffins as the base.
FUN FACT: Japanese for bear, Kumama is a seasonal spot that “hibernates” every winter. This hidden gem, minutes from downtown Jasper, is open for breakfast and dinner, while the canteen is open through the day.
Kumama is tucked into the reception building at Pine Bungalows in Jasper/Jennifer Bain
