A small order of fries from the Chip Shack in Charlottetown/Jennifer Bain

 WHAT: Hand-cut island fries

WHERE: The Chip Shack, 2 Great George St., Charlottetown, Prince Edward Island

 PRICE: $4.50 small/$5.50 large

DISH DECONSTRUCTION: PEI-grown potatoes are cut by hand, blanched, cooled and then cooked again to order before being tossed with salt and served.

WHY: I like food that has a story and this one revolves around Caron Prins, the self-styled “Queen of Fries.” She grew up in the PEI countryside surrounded by potatoes, then lived around Canada and the world for 23 years before moving home. “I woke up one beautiful morning with `I'm going to own a Chip Shack’ in my head,” she writes in a story posted on her waterfront shack. “A week later I found my girl on Kijiji, bought her unseen, dragged her home from Sydney Cape Breton and called her `The Chip Shack’ where the Queen of Fries was born.” The shack, born In 2011 and now on a floating dock at Peake’s Quay Marina/Peake’s Waterfront, is open from May to October.

FUN FACT: Since she has family members who are celiac, Prins make gluten-free fish and chips along with gluten-free aiolis, tartar sauces and apple fries. Her motto is: “Life is delicious.”
