WHAT: Dolsot Bibimbap

WHERE: Kimchi House, Jasper, Alberta

PRICE: $23.95

DISH DECONSTRUCTION: A Korean dish that Canadians adore, bibimbap typically pairs bulgogi (beef that’s been thinly sliced, marinated and grilled or stir-fried) with colourful vegetables (this time it was sprouts, cucumbers, carrots and greens), a sunny side up egg and white rice. The bowl comes with an optional dollop of gochujang — a Korean fermented red chili paste — that’s savoury, sweet and only slightly spicy. Half the fun is that after admiring the presentation, you get to muck it all up by thoroughly mixing your ingredients.

WHY: I go out of my way to support multicultural restaurants, especially in small communities like Jasper that has just 5,000 year-round residents plus plenty of tourists and seasonal workers.  Instead of getting bibimbap served in a “cold, regular bowl,” I happily pay an extra dollar for dolsot bibimbap served in a “hot stone bowl” so the bottom layer of rice gets nice and crispy.

FUN FACT: At Jasper’s only Korean restaurant, owner Monica An proudly sells her own soy sauce for $7.99 for a 10-ounce bottle.
