DISH DECONSTRUCTION: You’ll find Brothers Fried Pepperoni, served with Lawry’s sweet mustard, on Drift’s “Bar Bites” menu served daily from 3 p.m. Brothers Meats is a family-run Halifax business that produces more than 900 kilograms of pepperoni a day and sells it in its retail store and in supermarkets, gas stations and convenience stores. Its pepperoni comes in mild, hot, honey garlic, TNT, cheese and donair flavours.

WHY: Who knew that frying sliced pepperoni until it curls and gets crispy could create something so magical? Dipped in sweet and tangy mustard here (but there are variations), fried pepperoni is a popular pub food in Nova Scotia. Drift, at the Muir hotel, showcases the East Coast’s most beloved ingredients.

FUN FACT: In 2001, a Dartmouth man was banned for life for a Brothers pepperoni kerfuffle at the Fairmont Empress in Victoria. Nick Burchill had taken a suitcase full of pepperoni to B.C. for his naval buddies and left it — some in plastic, some in brown paper — on a table near an open window to keep it cool since there wasn’t a fridge in his room. He went out for a few hours and returned to some 40 seagulls feasting on his TNT pepperoni and had to chase them out. “The result was a tornado of seagull excrement, feathers, pepperoni chunks and fairly large birds whipping around the room,” Burchill wrote on Facebook. “The lamps were falling. The curtains were trashed. The coffee tray was just disgusting.” The hotel banned him for life, but in 2018 he asked for a pardon and got it after offering a pound of pepperoni as a peace offering.
