How fun are these corn ribs from Elderwood in the Fairmont Jasper Park Lodge/Jennifer Bain

WHAT: Corn Ribs & Farmer’s Cheese

WHERE: Elderwood at the Fairmont Jasper Park Lodge, 1 Old Lodge Rd., Jasper, Alberta

PRICE: $22

DISH DECONSTRUCTION: Sweet corn “ribs” are spiced, buttered and served with cotija cheese dip and lime.

WHY: Okay so I’m several years late to this trend of corn that’s shaped like ribs and eaten like ribs. Imagine cutting your cob in half lengthwise and then cutting each half in quarters so you’ve got eight, finger-like pieces of corn still on the cob. These beauties curl when grilled, roasted or air-fried, and you’ve got to eat them by hand, gnawing the kernels off the cob.

FUN FACT: The Fairmont Jasper Park Lodge’s $100 million transformation brings three new dining venues to Jasper. Elderwood, with a viewing window into the kitchen, takes over the former Great Hall and serves seasonal, regionally inspired dishes and shareable plates. Elk meatballs ($28) with smoked mint chimichurri, lemon zest, tzatziki and pita were another favourite dish when I dined here in June.
